Liked it: Slow Cooker Shredded Beef (Crockpot)

Need another slow cooker recipe for a roast? I have a great one! Slow cooker Shredded Beef is great for tacos, or on buns for sandwiches. It also freezes well for a quick dinner later if you have a lot of leftovers.

Slow Cooker Shredded Beef

About 4 lb roast (I used a chuck roast, trimmed well)

1 onion, chopped small

1 Tbsp extra virgin olive oil

1 Tbsp chili powder

1 tsp dried oregano

1-3 Tbsp water

Heat evoo in a skillet (I used a nonstick) and brown roast well on both sides while seasoning with salt and pepper. Place in slow cooker.

Add onions to oil left in skillet and saute until translucent.

Add chili and oregano, mix well. Add water, until the mixture is pasty.

Add to slow cooker with the roast. Cook on low for 8-10 hours. Before serving, remove beef and shred with forks. Replace into juices and cook 30 min-1 hour longer. Serve on tortillas or buns, or use for beef filling for enchiladas, burritos or chimichangas.

I forgot to take a picture of the finished product! By the time my husband came home and we got everydone seated for dinner, all I cared about was getting the food on the table and those whining little mouths full of dinner 😉 We ate the shredded beef on homemade hamburger buns with barbeque sauce (Sweet Baby Ray’s to be exact), and it was soooooo goooooood.
