Liked it: Grilled Lemon Pepper Shrimp (Quick & Easy!)

Need an idea for dinner tonight? There are so many great deals on seafood right now, during Lent. I scored a 2 lb bag of frozen, large, easy-peel shrimp last week, so I defrosted about 1 lb (about 25 shrimp) and peeled them. I then skewered them, brushed with 2 Tbsp melted butter and sprinkled with lemon pepper seasoning. I grilled them for about 2-3 minutes per side on a medium-low gas grill. The shrimp should just be white with the peachy-pink color on the sides. If you do not have a grill, these can also be broiled (watch very closely!) or sautéed in a skillet. Do not over cook the shrimp, or you will have shrimp chewing gum. They were delicious! We ate them with baked potatoes and can green beans. And easy, quick dinner! So good in fact, they were gone before taking a picture to go with this post even occurred to me. Maybe next time!
